Lemon Poppyseed Loaf Recipe;

Here is my favorite loaf recipe of all time! I made it on Saturday, and now it's all gone!! Enjoy! Bon appetite my dears.

Ingredients:
1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
1 1/2 cups all-purpose flour
3 tablespoons poppy seeds
1 tablespoon lemon rind
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk

Lemon Syrup:
1/3 granulated sugar
1 teaspoon grated lemon rind
1/3 cup lemon juice

Prep. Preheat oven to 325'F (180'C) for one hr. or until toothpick is clean
  1. In large bowl, beat butter with sugar until light and fluffy; beat in eggs, 1 at a time, beating well.

  2. In seperate bowl, whisk together flour, poppyseeds, lemon rind, baking powder and salt; stir into butter mixture alternately with milk. Spread into 8- x 4-inch loaf pan.

Lemon Syrup: In saucepan or microwave, warm together sugar and lemon rind and juice until sugar dissolves. With a skewer, make holes in the lemon loaf from top to bottom creating "tunnels". Pour juice all over loaf. Let cool in fridge for 1 hr. Munch on it later.
