Mint Chocolate Cupcake Recipe;

Oh gawd these are freaking delicious. I love em'! I've make four batches in the last two weeks..

Ingredients:
1 1/4 cups all-purpose flour
3/4 cups unsweetened Dutch-process cocoa powder
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoons baking powder
3/4 teaspoons salt
2 large eggs
3/4 cups buttermilk= 3/4 cups milk and 2 teaspoons lemon extract
3 tablespoons vegitable oil
3/4 cup warm water
1 teaspoon pure peppermint extract

1. Preheat over to 350 degrees. Line standard muffin tins with paper liners. Whisk together flour, cocoa powder, sugar, baking soda & baking powder, and salt. Add eggs, buttermilk, oil, water and peppermint extract. Beat with a mixer on low speed until smooth.

  Bake for 20-25 minutes

Iceing:
1 cup butter, softened
4 cups icing sugar
1/2 teaspoon vanilla extract
2 teaspoons lemon juice
